We started as a small, family winery about twenty years ago, and now the hobby has turned into a serious production of wine that receives gold medals every year. The wine, often called the royal Bordeaux coupage, is obtained from the Cabernet Sauvignon (80%) and Merlot grape varieties. It owes its strength, color and tannins to the Cabernet, and the velvety notes and partially ruby color to the Merlot grape variety. For the production of wine, we use only grapes from our own vineyard (3 hectares), which are harvested when they reach the optimal level of ripeness; often in the middle of October. The traditional method of production involves decanting the wine after vinification, without the use of a press, followed by at least three years of storage and aging in oak barrels with 7 decantings during that period. The high concentration of phenols (tannins), which is a characteristic of the Cabernet grape variety, ensures that Valčić – dry red wine develops in a total of 5 years after harvest into a top-quality wine with aromas of forest fruits and cherries and with a unique bouquet that is a consequence of strong tannins, the soil on which it is grown vines and methods of vinification and aging of wine, both in barrels and bottles.
