DiBonis winery and distillery was founded in 2009. The owner and founder Laszlo Boni, an electrical engineer by profession, realized his long-standing dream: to continue the long-standing tradition of his ancestors on both his mother’s and father’s side as the fourth generation of winegrowers and winemakers. In these long 15 years, there have been many beautiful successes, good deeds, many awards. But of course, as it happens when a man chooses nature as his business partner, there were also a few unsuccessful years, when the vine crop was bad. Considering the restless and investigative spirit of Laszlo, many things would have changed during these years. In the beginning, the large, world-famous vincellosa varieties such as shiraz, cabernet sauvignon, cabernet franc, pinot noir, merlot, sauvignon blanc, muscat ottonel, etc. were represented in the vineyard. During the past years, it turned out for many of them that they can survive in this climate and microclimate only with constant spraying of various preparations and chemicals. Since László was fanatical about production from the beginning and could not accept the amount of chemicals with which the above-mentioned varieties had to be treated, he started clearing vineyards and replacing these sensitive varieties with much more resistant and perhaps not so well-known varieties in the world. The most favorite discoveries are the black grape nero, which in Hungary is called “healing grape” because it is full of resveratrol, the white grape of generosity, which gives beautiful dessert wines from the late harvest as well as ice wines. There is also a special resistant variety of sauvignon blanc, which is absolutely different from the classic variety. Fortunately, the favorite shiraz has responded very well to the microclimate of our climate, producing a solid crop every year. In 2023, an application for certification of organic production was submitted. Actions for obtaining permits have been initiated and we are eagerly waiting to receive the certificate. There was no need to make big changes, since years ago we only used preparations allowed in organic production. During all these years of gaining knowledge and experience, wandering in the world of viticulture and winemaking. In 2022, László found his way… he resolved to reduce the capacity of the winery and to turn from massive production to the production of smaller quantities of wine. As he always liked to experiment, during the previous years he created several very interesting wines of limited quantity. They are mostly late vintages of white and red wine, but there are also two types of rosé. As these wines were greeted with great enthusiasm at competitions and on the market, the realization came by itself that all he had done so far was wandering, asada had finally found his way. In 2022, the late-harvest Aliz wine from the generoza grape won the award for the best sweet or semi-sweet wine in Serbia in 2022. The very next year, the DiIceWine grape wine of the ice harvest will win this title for the year 2023. Never before has our winery won awards for rosé wines, and in 2023 both types of limited rosé, DiNero rosé 2022 and DiShiraz rosé 2022 won gold awards at international competitions.
